Cooking Time: 60 mins
Servings: 12 portions
Ingredients:
2 cups or 240g all-purpose flour
1 cup or 190g brown sugar
1 tsp baking powder
1 tsp baking soda
2 tbsp poppy seeds
Zest from 1 lemon
1/4 cup or 60ml lemon juice (from 1 lemon)
3/4 cup or 180ml soda water
2 eggs
1/3 cup or 60ml melted oil or butter or margarine
Oil for greasing the baking tray
Directions:
Preheat the oven to 180 degrees Celsius or 356 degrees Fahrenheit.
In a bowl, mix all the dry ingredients: flour, brown sugar, baking powder, baking soda, poppy seeds, and lemon zest.
In another bowl, combine all the wet ingredients: lemon juice, soda water, eggs, and melted margarine.
Transfer the dry ingredient mixture into the bowl with the wet ingredients and whisk well to create a smooth batter.
Grease a baking tray with your preferred oil.
Pour the batter into the baking tray and spread it evenly.
Bake the cake for approximately 60 minutes or until a toothpick inserted into the cake comes out clean.
Once baked, let the cake cool, and then it's ready to enjoy!
Lemon Muffins with Chickpea and Almond Flour
(Refined Sugar-Free, Gluten-Free, Egg-Free)

Ingredients:
3 ripe bananas
Juice from 1-2 lemons
1 cup or 100 grams chickpea flour
1 cup or 100 grams almond flour
1 tsp baking soda
1 tbsp poppy seeds
1 tsp cinnamon + more for sprinkling
A few walnuts for decoration
Coconut oil or olive oil for greasing the tray
Directions:
Preheat the oven to 180 degrees Celsius or 356 degrees Fahrenheit.
In a bowl, mix the dry ingredients: almond flour, chickpea flour, baking soda, poppy seeds, and cinnamon.
In another bowl, mash the ripe bananas with a fork and add lemon juice. Mix well.
Combine the dry ingredients with the wet ingredients to create the muffin batter.
Grease a muffin tray with coconut oil.
Spoon the batter into each muffin case.
Sprinkle some more cinnamon on top and add a walnut on each muffin for decoration and crunch.
Bake the muffins for approximately 30-35 minutes or until a toothpick comes out clean.
